A Taste of New Orleans! (Sucré King Cake GIVEAWAY)

Sucré King Cake
New Orleans has always intrigued me with it vibrant culture, dynamic music, and flavorful foods. And quickly approaching is one of the times of year that the city shines its brightest -- Mardi Gras!  Sadly I won't be able to make it down this time 'round, but I was delighted to hear that I could experience at least one integral part of the tradition right here in my home. And so can one of you! =D
Sucre King Cake 2
It turns out that Sucré, whose French macarons I've been coveting for quite some time, also makes a killer King Cake (a must at any Mardi Gras celebration!). It's gotten praise from The Times Picayune, Washington Post, and New York Times, among others. If you're among the uninitiated, a King Cake consists of buttery sweet danish pastry filled with cinnamon and cream cheese then topped off with a vibrant array of colored sugar. A trinket (usually a small plastic baby) is also put in each cake. The person who finds it is then dubbed King or Queen for the day and said to receive good fortune for the year! That person then has the duty to pay it forward by throwing another party and serving a King Cake. How. Fun. Is. That?! So the point of all this is that Sucré has generously offered to provide one of their award-winning King Cakes (feeds 8-10) to one lucky 6 Bittersweets reader just in time to throw your own local mini-Carnival!

This giveaway will remain open for 5 days and is limited to addresses in the continental US. To enter, do as many of the following as you want and leave a separate comment for each thing you do! Please also make sure to leave me your email address to contact you if you win. The giveaway will close on Tuesday, February 5, at midnight, and the winner will be announced shortly thereafter!  This giveaway has ended -- thanks to all who entered!
  • Tell me your favorite New Orleans, Mardi Gras, or King Cake experience if you've had one.
  • Visit Sucré's online store, and share your favorite treat in the comments.
  • Like Sucré on Facebook, then leave a comment telling me you did so.
  • Follow Sucré on Twitter, then leave a comment telling me you did so.
  • Subscribe to this blog, then leave a comment telling me you did or already do.
  • Follow 6 Bittersweets on Twitter, then leave a comment telling me you did or already do including your Twitter name.
  • Tweet about this giveaway including a link to this post and tagging @6bittersweets, then leave a comment telling me.
P.S. - Don't like relying on the whims of Lady Luck? Sucré will take/ship out orders of King Cakes until February 11, and don't forget to check out their nommy macaron selection too while you're there!

Sunday Favorites and a Few Free Cookbooks!

Happy (belated) Thanksgiving! I hope all my US readers had a wonderful holiday surrounded by LOTS of good food and loved ones. I definitely did and am so THANKFUL for the people in my life right now. Since P's schedule (off work at midnight on Thanksgiving and back to work at 4 am on Black Friday) ruled out our usual tradition of driving to see his family, I did my best to create a little feast for us as well as my mom here: P's favorite tomato vodka pasta, scallion cheddar biscuits, steamed broccoli with hollandaise sauce, dijon mustard lemon roasted potatoes, Mom's celery mushroom wheat gluten stirfry, and tiramisu served in individual glasses.

In support of the holiday spirit (and to prevent my apartment from exploding from the pressure of too many unused cookbooks), I've decided to give away 4 cookbooks that are gorgeous and have gotten great reviews, but that I simply don't see myself using to full advantage anytime soon. To keep things simple, I'm giving these away on a first come, first serve basis, and I'll pay for shipping within the continental US. Simply comment with the title you want to enter. Limit 2 cookbooks per person, but feel free to name an alternative in case your 1st choices are taken.

Wednesday Favorites and Food Jewelry Giveaway!

Hi everyone! I know it seems like I dropped off the face of the (blogger) world, but don't worry I'm fine! Better than fine, in fact. I started a new full-time job last week and I'm loving the people and being back at work. The only slight downside is the 1 to 1 1/2-hour commute, but even that gives me time to flip through the latest Gourmet Traveller or to dance (inwardly) to my favorite music. My coworkers been really welcoming and, perhaps best of all, it's a very food-friendly group so I know my baked treats will be welcomed =D.

I
am planning to get back into the groove of regularly posting my original recipes, photos, and other content. But in the meantime, I thought I'd jump back into blogging by sharing some back-logged food photography favorites and a super fun giveaway of some sushi-shaped earrings! I have to be honest...this might have been a product review rather than a giveaway if I had pierced ears. But my loss is your gain, so I hope you'll take advantage of all the many ways to enter!
sushi post earrings
These earrings and other adorable food jewelry are hand-sculpted from polymer clay by the talented Amelia of The Frippery Factory. Her work has been featured at the Walker Art Center's (one of the "top 5" modern art museums in the US) gift shop, and it's my delight to share her charming work here. If you like these earrings, be sure to check out her site for other interesting designs based on foods including linguine frutti di mare and French macarons. To enter, do as many of the following as you want and leave a separate comment for each thing you do! Please also make sure to leave a way for me to contact you if you win. The giveaway is limited to mailing addresses in the US and will close on July 4 at midnight; the winner will then be announced shortly thereafter.

As those of you who are also students must know, finals time is upon us! I have literally just spent the past 3 days straight looking at all variety of fetal pig dissection photos to prepare for my test today, and I cannot express to you the full extent of my relief to (hopefully) never ever have to look at another one of those images again!

A Work of (Edible) Art: Monet's Water Lilies Cupcakes (Plus Cookbook Review and GIVEAWAY)

If you've seen my previous cute owl or creepy critter cupcake posts, both adapted from Hello, Cupcake!, you already know that I'm a huge fan of Karen Tack and Alan Richardson. Sure I love to make most treats from scratch, but I also love that their projects allow everyone from first-time bakers to professional decorators to create works of edible art from easy-to-find ingredients. I was delighted at the news that this unbeatable duo was coming out with another book and even more excited to accept a free advance copy of Cupcakes, Cookies, & Pie, Oh My! to review!

Monet's Water Lilies Cupcakes
Although Cupcakes, Cookies, & Pie, Oh My! is Karen and Alan's 3rd book together, it stands apart from Hello, Cupcake! and What's New, Cupcake? as their first to include cookies, pie, and oh my other treats in addition to cupcakes. If there's one thing I've learned about their books, it's that it is never easy to pick just one project to make. Stiletto Shoe Cupcakes, Chocolate-dipped Tea Bag Cookies, Nacho Cheesecake, and Hen House Mini Pies all beckoned to me as I flipped through CC&P. But the opportunity to literally "make art edible" with Monet's Water Lilies Cupcakes turned out to be the one I couldn't resist.

Cupcakes Cookies & Pie Oh My
I realize I picked one of the more technically challenging recipes to test out, but I hope you'll agree the results are worth it and worth-y of a special occasion. One of my pet peeves is when dessert decorating books are stingy with photos, so I was glad to see that CC&P continues the pair's tradition of including photos of every recipe. Some particularly tricky steps even get their own photos. Even though I have some experience with baking and decorating, I still found the visual guidance extremely helpful when paired with the book's consistently clear and concise written directions.

In short, I think that Cupcakes, Cookies, & Pie, Oh My! would make a great addition to any imaginative baker's bookshelf. Its projects are accessible for beginners but fun and unique enough to interest more experienced bakers. As with Karen and Alan's previous outings, CC&P contains ideas for specific holidays -- such as Father's Day, Thanksgiving, and Halloween -- as well as more versatile party ideas -- such as cake pops on plastic forks. There's really something for everyone, which is why I'm giving away a copy of Cupcakes, Cookies, & Pie, Oh My! by Karen Tack and Alan Richardson to one lucky reader! This giveaway is open to anyone with a US or Canadian shipping address. To enter, simply do as many of the following as you want and leave a separate comment for each thing you do! Please also make sure to leave a way for me to contact you if you win. The giveaway will close on April 12 at midnight, and the winner will be announced shortly thereafter. Good luck! This giveaway has ended -- thanks to all who entered!

Perhaps to the point that 8 pm felt like midnight and you gladly fell into an early slumber, feeling satisfied and thankful on all fronts? On the topic of thankfulness, I have a LOT to be grateful for in 2011.

To name just a few...for my mom finding a new/better job despite this economy; for my friends who gave me the confidence to start selling my baking; for my boyfriend who supported me through all the crazy moments and even revealed a surprising talent for shaping sugar poppies at one point 8p; for all the customers who trusted me to whip up desserts for their family birthdays, anniversaries, and christenings; for 2 magazines publishing my photos, and for so so much more.

i heart macarons
I mentioned in my Singapore post that I was lucky enough to catch up with 2 groups of lovely bloggers during my trip. I say "lucky" not only because we managed to match up schedules on such short notice, but also because 4 of them had just returned from being overseas and also planned to stay in Singapore only briefly. Eunice of Heaven in a Wild Flower, having moved to London some years ago, was one of these globetrotters ^_^.

I'd discovered Eunice's blog through her gorgeous macaron posts, so it wasn't long after we met that we began gabbing about which patisserie made them best and the secrets to making good macs at home. At this point, hearing that I was already missing baking in Singapore, Eunice was sweet enough to invite me into her chocolatier friend's professional kitchen where she'd be making macarons for a wedding! She led the baking, while I put myself in charge of visually documenting the process. We really hope you enjoy the following step-by-step photo tutorial of macaron-making that is the fruit of our collaboration. Now please turn your full attention to our resident macaron master =).

Wedding Photography by Eunice; Tutorial Photography by me.

I had the lovely fortune of meeting up with Xiaolu from 6 Bittersweets when she went to Singapore recently for a holiday. I too, was back in Singapore for a holiday as I'm usually based in London. The precise reason was for a good friend's wedding and I had promised her I'd make her a dessert table, as well as arrange some of her wedding flowers. Little did I know what a big undertaking that would be!

jwwedding72
So when a few of us met up over dinner and I mentioned this, Xiaolu gamely said she'd love to come and help out as I attempt to make 75 macarons, 12 meringues and 2 trays of rice krispies treats! Luckily for me, I also had the use of a proper commercial kitchen, courtesy of my friend E who owns the lovely chocolate shop Truffs, in return for showing his staff how macarons are made. This was the first time I had conducted a class of some sort, or made macarons in such a big batch, so I was fairly worried about everything working properly. I'm happy to report that all went well, and I was very lucky to have Xiaolu helping out as well as taking pictures.

Diptych 1+2
For the wedding, the bride wanted a whimsical fun garden theme. The colour palette she had picked was raspberry pink and lime green. I made green bouquets for the bridesmaids, and a pink one for her bridal bouquet, as well as the table flowers. We also placed apples all around as decor. I set up a dessert table using some vintage china I've been collecting, and decorated it with some of the leftover flowers. The macarons and other treats were laid out together with some luscious cupcakes baked by another friend. I must say that they looked really enticing and lovely. By the end of the lunch, all the desserts were gone!

I hope the visual recipe tutorial below helps you to recreate these little beauties!

Pink Macarons with Chocolate Ganache Filling [Printable Recipe]
Makes about 50 to 54 shells (about 25 macarons)

EUNICE'S NOTES: This basic recipe can be scaled up or down, I always use the egg whites as the base for proportioning the rest of the ingredients. So for every 1 part egg whites, use 1.3 parts almond flour, 1.6 parts icing sugar and 0.55 parts castor sugar.

XIAOLU'S NOTE: For additional tips on making French macarons at home as well as several very helpful videos of the mixing process, please check out my first macaron post!

100 g egg whites, aged for a day (equivalent to about 3 egg whites)
3 g egg white powder
130g almond flour (blitz in food processor together with icing sugar to get a finer texture)
160 g powdered sugar
55 g castor sugar
Pink gel food coloring (or other color)

Sift processed powdered sugar and almond flour together in a bowl. Set aside.

Diptych 3
Mix egg whites with egg white powder and whisk in electric mixer until soft peaks on medium high speed.

Lower speed on electric mixer and add in castor sugar slowly while still whisking until fully incorporated. Continue whisking on medium high speed until your egg white meringue mixture reaches stiff peak stage. Add in your food colouring when whisking.

IMG007
Fold in 1/3 of dry ingredients (icing sugar + almond flour) into meringue with a spatula gently. Add in 1/3 more and fold again before mixing in the last 1/3 of the dry ingredients.

Diptych 4
Make sure all dry ingredients are incorporated into the meringue and start folding mixture more vigorously to form a shiny batter with the consistency of flowing magma or drips down like ribbons.

Diptych 5
When you lift the batter up and let it drip down, it should slowly disappear into itself without leaving a peak. Be careful not to over mix as batter will spread too much when piped.

Diptych 6
Line 2 baking trays with non-stick parchment paper (or silpat). You can stick it down with bits of batter in the four corners.

Fill a piping bag fitted with a 1-cm (about 2/5-inch) round tip with the batter, and pipe even rounds of batter, about 3.5 cm (about 1 1/3 inches) across, onto the tray. If you've mixed the batter properly, it should not spread flatly out too much (overmixed) or leave a peak (undermixed).

Diptych 7
Let the batter dry for about 30 minutes. Preheat oven to 170 degrees C/335 degrees F (for convection ovens) OR 180 degrees C/350 degrees F (for regular ovens).

When batter is dry to touch (it forms a slight crust), turn the oven down to 140 deg C (or 150 deg C for conventional oven) and bake shells for 14-15 minutes, turning the trays halfway through baking.

Diptych 8
After baking, lift parchment onto wire rack to let shells cool and gently lift up from paper when cool.

Chocolate Ganache Filling
125 g dark chocolate, broken into small pieces
125 ml single [light] cream

Heat cream in saucepan until it comes to a boil.

Pour the cream over the chocolate and use a spatula or wooden spoon to stir in a circular motion from the centre of the bowl and slowly incorporate more and more of the cream until the chocolate and cream comes together into a smooth emulsion.

Let it cool at room temperature until it thickens, about 4 hours, or in a fridge for 2 hours.

Assembly

Match pairs of shells of even size.

Fit piping bag with plain round 1 to 1.5 cm tip [about 1/2 to 2/3 inch]. Fill piping bag with chocolate ganache. Pipe a small mound of chocolate ganache filling onto one half of each pair of shells. Top with the other shell.

Stylish Appetizer Plate GIVEAWAY!

Porcelain Plate Giveaway
One thing I've learned from being a food blogger/photographer is the importance of presentation. Of course great taste is key, but we "eat with our eyes," as they say. An attractively presented dish will be that much more appealing, even if the food itself is the same. That's why I like to find interesting, stylish dishes for serving finger food to my guests. If you're the same way, you'll be happy to hear that Inmod.com, an online retailer of modern décor and home furnishings, contacted me recently to host a giveaway of their Porcelain Modular Square Plate with Wooden Frame (pictured above). I like that with this set you can choose to arrange the plates neatly inside the wooden frame or spread them out separately for more people to enjoy. If this is something you'd like to have, here's what you can do. This giveaway is only open to US residents within the 48 contiguous states. To enter to win this plate set, simply do as many of the following as you want and leave a separate comment for each thing you do! Please also make sure to leave a way for me to contact you if you win. The giveaway will close on September 16 at midnight, and the winner will be announced shortly thereafter. Good luck! THIS GIVEAWAY HAS ENDED. THANKS TO ALL WHO ENTERED!
